Ingredient Notes to Make Perfect Banana Protein Pancakes

Flour: All purpose unbleached flour works the best like Wheat Montana white flour or King Arthur organic all purpose flour. The quality of flour matters because it will affect the taste and texture. If you are gluten free I’ve had the best results with organic Oat Flour or King Arthur Cup for Cup flour.

Protein Powder: Just Ingredients is my go to protein powder. I swear by it! It’s not chalky, taste so good, is made with real ingredients (nothing artificial) and works so well in baking. The Snickerdoodle protein powder or Just Plain protein powder works best in these protein pancakes. Use my affiliate code “cookieeclub” to save 10 percent every time.

Bananas: Make sure the bananas are ripe. Like a marbling of brown and yellow. And to avoid mashing the banana, massage the banana in its skin, cut it open and scrape out the mashed banana with a spoon or spatula. Less mess and less dishes.

Milk: I like whole grass fed A2 Milk because it’s easier on my stomach, less in sugar and higher in protein but you can use any milk you like. Even a dairy free milk would work. My favorite dairy free milk is Elmhurst Coconut, Cashew Milk made with filtered water, coconut creme, cashews and sea salt. Yum!

Chocolate Chips: I love Enjoy Life Mini Semi Sweet Chocolate Chips! They are dairy free, made with real cocoa butter and don’t contain any preservatives.

Recipe Variations

  • Instead of chocolate chips use your favorite fruit. For Valentines day I like making these pancakes in the shape of hearts and using fresh raspberries. Fresh cut, strawberries would be yummy too!
  • If you don’t like all purpose flour try using 1 1/4 cup of organic Kamut. I get mine from the Food Nanny. Or use Almond Flour if you need a good gluten free flour. Just replace the regular flour with 3/4 cup to 1 cup of almond flour. Or a good cup for cup grain free flour.
  • For double chocolate banana chocolate chip pancakes replace 1/4 cup of flour with cocoa powder and use Just Ingredients Chocolate Protein Powder.

Banana Bread Chocolate Chip Protein Pancakes

Banana bread lovers unite! These protein pancakes taste just like chocolate chip banana bread but take half the time to make and are packed full of nutrients. Simple, yummy and delicious is how I would describe these flap jacks. Topped with grass fed butter and pure maple syrup they make the best breakfast or brunch.

Pancake Batter

Instructions

  • Preheat a pancake griddle to 300 degrees Fahrenheit.
  • In a large bowl add flour, protein powder, baking powder, baking soda and salt.
  • Mix the dry ingredients together lightly with a fork.
  • Now pour into the dry ingredients the whole milk kefir, eggs, mashed banana, vanilla extract, melted butter, water and chocolate chips.
  • With a dough whisk, whisk the ingredients together until a smooth, sort of thick batter is formed.
  • Butter the hot griddle and then using a ¼ cup, scoop the batter onto the griddle, cooking no more than 5 pancakes at a time.
  • Sprinkle extra chocolate chips onto the pancakes before flipping.
  • When the pancakes bubble up or look golden brown, flip them over to cook on the other side.
  • Before removing the cooked pancakes from the griddle, butter the tops of the pancakes.
  • Place onto a plate and serve with pure maple syrup.
  • Enjoy!

Notes

Vanilla or Plain Just Ingredients Protein can be used instead of Snickerdoodle Protein Powder. Just make sure to add 1 tsp of cinnamon if swapping for another protein powder.
