Ingredient notes
Protein Powder: Use a vanilla or plain protein powder in this recipe for the best results and flavor. My favorite is Just Ingredients, Just Plain Protein Powder. Peanut Butter: Use a natural peanut butter. Not a peanut butter pre mixed with hydrogenated oils. Look at the ingredients for Dry Roasted Peanuts and salt. That’t is. Simply mix the oils in with one beater and a hand mixer until smooth. Use in the recipe. Then screw the lid back onto the peanut butter and store in the refrigerator upside down. This keeps the oils from separating so you won’t have to stir them in again. I like chunky peanut butter for texture but creamy peanut butter works too.
Honey: I used honey as my sweetener because i’m obsessed with honey. I love the flavor so much. However you can use pure maple syrup as well.
Recipe Varriations
- Try using a peanut butter protein powder instead of a vanilla one. It makes the cookie dough bites extra peanut buttery!
- Instead of coating the the cookie dough in melted chocolate, fold in the chocolate chips and roll into cookie dough balls. Refrigerate and enjoy!
How to make The High Protein Peanut Butter Cookie Dough Bites
- Line a quarter cookie sheet with parchment paper and set aside.
- To a mixing bowl add protein powder, peanut butter and honey. Using a rubber spatula mix the ingredients together until a combined and a dough forms.
- With a one tablespoon cookie scoop, form 9 cookie dough balls and place onto the cookie sheet. Freeze for 15 minutes.
- Melt the chocolate. Place the chocolate chips and coconut oil in a microwave safe bowl for 30 seconds. Mix with a spoon. Microwave another 30 seconds. Mix and continue if the chocolate isn’t fully melted and smooth.
- Remove the cookie dough from the freezer and coat each one in melted chocolate. Place back onto the pan and sprinkle the tops with flaked sea salt. Place back into the freezer for 15 minutes until set. Or the refrigerator for at least an hour. Serve and enjoy!
- Store leftover in an airtight container in the refrigerator for up to 7 days.
