A tasty chicken salad. Made with Rotisserie chicken, no grapes, fresh dill, crisp pickles, avocado mayo and greek yogurt. It is even better than the classic recipe and pairs so well with sourdough bread, croissants or crackers. You need this meal in your life. It’s better than Jimmy Johns Sandwiches.

Why you will love this chicken salad compared to others
I have always disliked chicken salad because of the grapes and slivered almonds. It doesn’t make sense to me for them to be there. The texture of those ingredients paired with the creamy chicken isn’t right. That’s why I created a recipe with dill and pickles instead. The dill weed and pickles give the creamy mayo chicken delightful flavor and crunch. Making it very enjoyable to eat. It is a home run in my opinion and reminds me of my moms pasta salad but in sandwich form. I highly recommend making it for lake days, picnics, parties, backyard BBQ’s and more. It’s easy to whip up and tasty on the taste buds.

What to pair with your chicken salad
Sourdough: I personally love sourdough bread. Especially for this recipe. It is gut healthy and made with simplistic ingredients like water, flour, salt and naturally fermented starter. The crust is very crunchy and the inside of the loaf is perfectly tangy. It compliments the dill pickle chicken salad so nicely. You can make your own from scratch or buy a loaf from the store.
For a from scratch loaf of sourdough bread use Los Kitchen, Classic Sourdough book. She teaches you how to make your own starter, how to make bread and use the discard. Or if you live in Salt Lake City, UT visit Caputos for freshly made sourdough bread and baguettes from Leavity Bakery. That’s where I go when I don’t have time to make my own. It’s the best!
Croissant: When it comes to chicken salad you can’t go wrong with a buttery, flakey croissant. It’s a perfect match! Try to buy ones from a local cafe or bakery and ask if they are freshly made in house. They are a little more expensive than Costco but contain cleaner ingredients and taste so much better.
Bagel: A plain or asiago bagel makes for an amazing sando. Especially with this Dill Pickle Chicken Salad Recipe. Get some from your local bakery for freshness. I like buying my bagels from Einstein’s or making them from scratch.
Wraps: If you are gluten free or needing a lower carb option I really like these Coconut wraps by Nuco Duo. The texture and taste is very similar to a tortilla.
Crackers: For variety try using crackers. You can dunk them in the chicken salad. Like chips and salsa. My favorite cracker to eat with the chicken salad is Simple Mills Organic Seed Flour Crackers.
Vegetables: A low carb option is to slice up some cucumbers and use them as a cracker to dunk into the chicken salad. It’s crunchy, refreshing and nutrient dense.
