Ingredient notes for the best donuts
- Organic Pure Pumpkin Puree: not pumpkin pie filling. Do not get the two mixed up. I prefer using organic pumpkin puree and purchase mine from target, trader joes, whole foods, etc.
- Protein Powder: I always use Just Ingredients Protein Powder because it it contains only real ingredients, zero artificial flavoring and sweeteners and multiple sources of protein to aid digestion. Use my code “cookieeclub” to save at checkout. The seasonal Pumpkin Pie Spice Protein Powder, Just Plain Protein Powder or Snickerdoodle Protein Powder works well in this recipe.
- Flour: Always use an unbleached flour that isn’t overly processed. I prefer King Arthur Organic All Purpose White Flour. It’s just organic wheat. No folic acid or filler ingredients.
- Wet Ingredients: like pumpkin puree, egg and milk should be room temperature so the doughnuts bake up nice and fluffy.
Recipe Variations
- If you do not have a donut pan try using a muffin pan or mini muffin pan instead. Bake according to the instructions on the recipe card below.
- Do you like glazed donuts? Add 1/4 a cup of powdered sugar to a bowl with a drop of pure maple syrup and a pinch of cinnamon. Pour in a splash of milk of choice and whisk until combine. Add more milk if needed to get the desired consistency that you want. Then dip the slightly cooled donut into the glaze and place on a wire cooling rack to set before eating.
- If pumpkin puree and spice is not your jam replace the pumpkin with unsweetened apple sauce and the milk with apple cider or apple juice for a delicious protein apple cider donuts instead. I like using Just Ingredients seasonal Snickerdoodle Protein Powder when making the apple cider donuts but a neutral flavor like vanilla or just plain protein powder can be used too.
How to Make my Baked Pumpkin Spice Protein Donuts
- Make the Pumpkin Spice Protein Donut Batter: Stir all of the dry ingredients together in a mixing bowl – flour, protein powder, baking powder, ground cinnamon and sea salt. Then whisk in the wet ingredients until just combined – pumpkin pure and milk.
- Bake the Pumpkin Spice Protein Donuts: by transferring the batter into the the greased doughnut pan. Bake 350 F for 8-10 minutes.
- Brush the top of the baked doughnuts with melted grass fed butter
- Then dunk the top of the donut into the organic cinnamon and sugar
Expert Tips
- Baked donuts are best when you have a donut pan. I linked the Wilton donut pan that I own and use in the full recipe below.
- Always read a recipe first before baking and then measure out all the ingredients so nothing is skipped over. Being prepared is the key to success.
- To get uniform donuts use a pastry bag for the batter, snip the tip of the bag with scissors and pipe the batter into the pan.
- If your oven temperature is inconsistent I recommend buying an oven thermometer to keep track of your ovens heat. If the oven runs hot, say it is set to 350 F but reads 375 F, lower the oven temperature to 325 F for a more even bake. Or vise versa if your oven temperature is running colder. Knowing your oven temperature will help to avoid over baking or under baking treats and sweets.
