Baked Pumpkin Spice Protein Donuts

My small batch Baked Pumpkin Spice Protein Donuts are glazed with grass fed butter and rolled in organic cinnamon and sugar. Made with protein powder and clean ingredients so you can enjoy a fall treat without feeling icky afterwards.
Servings: 4 doughnuts

Ingredients

Doughnut Topping

  • 1-2 tablespoon melted butter I use grass fed butter
  • 2 tablespoons organic sugar
  • ½ teaspoon organic pumpkin pie spice or ground cinnamon

Instructions

  • Preheat the oven to 350 F and lightly grease the donut pan.
  • To a mixing bowl add the protein powder, all purpose flour, baking powder, pumpkin pie spice and sea salt. Stir with a whisk until combined.
  • Add the pumpkin puree, egg (if you want extra protein) and vanilla extract to the dry ingredients. Whisk until combined and the last bit of flour dissapears.
  • Pour the batter into a piping bag. Snip off the tip with scissors (about a 2 inch opening) and pipe four donuts into the donut pan.
  • Bake the donuts 350 F for 8-10 minutes until the donuts are baked through and fluffy.
  • Melt the butter and combine the pumpkin pie spice and sugar together in a bowl.
  • Brush the tops of the warm donuts with the melted butter using a pastry brush and dunk the tops of the donut in the sugar and spice mixture.
  • Best enjoyed while the donuts are warm.

Notes

To make Apple Cider Doughnuts swap out the pumpkin puree with unsweetened applesauce, the protein powder with Just Ingredients Apple Pie Protein Powder or Snickerdoodle Protein Powder and replacing the milk with pure apple cider or apple juice. Follow the instructions as instructed above.
