No Bake Cowboy Cookie Dough Bites

No Bake Cowboy Cookie Dough Bites are my healthy take on a cowboy cookie. It’s a great post workout snack and is the perfect mini treat to have with any meal. These little balls of deliciousness pack a lot of protein and nutrients. They are fun and easy to make and don’t require a lot of effort. Its like having a granola bar but in the fun shape of cookie dough. I hope you enjoy them.

Ingredient notes

Oats: Use whole rolled oats not quick oats. Quick oats absorb liquid more quickly leaving you with too soft of a cookie dough bite. The rolled oats do not absorb the liquid as quickly leaving you with a chewy, granola bar like texture. My go to oats that I buy are One Degree Organic Sprouted Oats from Costco or Amazon.

Coconut Flakes: I like using the coconut chips in the recipe but you can use unsweetened coconut flakes too. It really comes down to personal preference. Both are great options.

Flax Meal: The flax meal is like the flour in this recipe. However if you are not a fan of flax meal you can replace it equally with your favorite protein powder. Peanut Butter: Opt for a natural peanut butter that only contains peanuts and salt. Oh and quick tip, after stirring in the natural oil and using it, place it into the refrigerator upside down in the refrigerator. It will keep your natural peanut butter super creamy. You can also use almond butter, cashew butter or tahini if you don’t like peanut butter.

Chocolate: Mini semi sweet chocolate chips work best. They distribute more evenly so theres a little bit of chocolate in ever bite. Enjoy life mini chocolate chips are my favorite. It’s quality chocolate that is dairy free, soy free and made in a nut free facility.

Chia Seeds: Did you know 1 tablespoon of chia seeds per day provides all the omega 3’s that your body needs? Kind of cool right? Here’s a fun article to read on chia seeds. If you aren’t a fan of the little black seeds try replacing them with hemp hearts or extra flax meal.

Honey: I’m a honey gal. I will always choose it over any other refine sugar free option. However you can use equal amounts of pure maple syrup too.

Recipe Variation

  • If you don’t like coconut try substituting the coconut flakes with raisins, dried cranberries, pumpkin seeds, unsalted chopped peanuts, chopped pecans, etc. Or add 1/3 cup more oats and 1/3 cup more chocolate chips.
  • Swap out the peanut butter with your favorite nut butter (almond butter, cashew butter) or use softened coconut oil.
  • Try using your favorite protein powder instead of flax meal. My favorite protein powder to use for all my baking is Just Ingredients, Just Plain Protein Powder!

How to make No Bake Cowboy Cookie DOugh Bites

  1. To a large mixing bowl add peanut butter, honey, oats, flax meal (and or protein powder), coconut chips, mini chocolate chips, and chia seeds. *Read recipe variations for any substitutes.
  2. With a rubber spatula or wooden spoon mix all the ingredients together.
  3. Line a quarter sheet pan with parchment paper. Then using a 2 oz cookie scoop, scoop out 12 cookie dough bites onto the baking tray lined with parchment paper.
  4. Cover the cookie dough bites with a lid or plastic wrap and allow them to set up in the refrigerator for at least 30 minutes.
  5. Now it is time to eat them or store in the refrigerator, covered for up to 7 days.

Ingredients

Instructions

  • First grab a medium size mixing bowl.
  • Next add the oats, coconut flakes, flax meal, mini chocolate chips, peanut butter, honey, and chia seeds to the bowl.
  • Third, mix all the ingredients together until completely combined using a rubber spatula or wooden spoon.
  • Now line a quarter baking pan with parchment paper and using a 2 tablespoon cookie scoop, make 12 energy ball bites and place on the lined baking pan.
  • Transfer the energy bites to the fridge to set for at least 30 minutes. Get a workout in while waiting if you can or want too.
  • After 30 minutes or more of chilling, remove the energy ball bites from the refrigerator and enjoy as a post workout snack or as a nutrient dense treat with any meal.
