No Bake Energy Ball Cookie Dough Bites

No Bake Energy Ball Cookie Dough Bites are great as a post workout snack or a fun addition to any meal. These little balls of deliciousness pack a lot of protein and nutrients. They are fun and easy to make and don’t require a lot of effort. Enjoy!
Servings: 12 energy bites

Ingredients
  

  • 1 cup organic rolled oats
  • cup coconut flakes or shredded unsweetened coconut
  • cup organic ground flax meal
  • cup mini semi-sweet chocolate chips I buy enjoy life mini chocolate chips
  • ½ cup creamy peanut butter try to use a peanut butter that contains only peanuts and salt
  • ¼ cup raw honey
  • 1 tablespoon chia seeds

Equipment

  • 1 Mixing bowl
  • 1 Quarter Sheet Pan
  • Half Sheet Parchment Paper
  • 1 Cookie Scoop

Method
 

  1. First grab a medium size mixing bowl.
  2. Next add the oats, coconut flakes, flax meal, mini chocolate chips, peanut butter, honey, and chia seeds to the bowl.
  3. Third, mix all the ingredients together until completely combined using a rubber spatula or wooden spoon.
  4. Now line a quarter baking pan with parchment paper and using a 2 tablespoon cookie scoop, make 12 energy ball bites and place on the lined baking pan.
  5. Transfer the energy bites to the fridge to set for at least 30 minutes. Get a workout in while waiting if you can or want too.
  6. After 30 minutes or more of chilling, remove the energy ball bites from the refrigerator and enjoy as a post workout snack or as a nutrient dense treat with any meal.
