Ingredient Notes to make the best Pumpkin Latte Protein Shake

  • Sweetener: If you don’t have dates or prefer another sweetener try using 2 teaspoons of pure maple syrup or two tablespoons of coconut sugar.
  • Protein Powder: I like using Just Ingredients Just Plain Protein Powder. It taste like true vanilla bean. Use my code “cookieeclub” to save on every order. It’s my favorite protein powder brand, made of 100% non denatured New Zealand Whey, sweetened with stevia and monk fruit, has added collagen and chia seeds. Making it easy on my stomach and taste absolutely delicious! Feel free to use your favorite protein powder. Or 2 tablespoons of flaxseed as a vegan alternative.
  • Milk: I enjoy using Organic A2, A2 Whole milk because it contains natural protein and omega 3 fatty acids but feel free to use a dairy free alternative like Malk Milk or Elmhurst.
  • Coffee Beans: Choose a quality coffee bean for the espresso. My favorite brand is Purity Coffee. It is a certified organic company that makes sure each batch of beans are free of harmful pesticides, mycotoxins and mold so you do not get the jitters of regular coffee or the after coffee caffeine crash. It’s the best tasting too!

Homemade Whipping Cream for your Pumpkin Latte Protein Shake

Homemade whip cream is the best! It’s so easy to make and the best part is that you have control over the ingredients you use. Most whip cream in a can contains harmful additives like hydrogenated oils and high fructose corn syrup. My recipe does not. I promise your drinks will never be the same.

For Fresh whipped cream topping: add 1 cup of heavy cream, 2 teaspoons of pure maple syrup and a splash of pure vanilla extract to a professional grade whip cream dispenser. Attach a No2 cartridge per dispenser directions, shake 10-12 times and use. Store leftover in the fridge to use for up to 7 days.

Directions to make your shake

  1. Add two dates to a small bowl of boiling water. Let the dates soak for 10 minutes to soften.
  2. Grind 2 tablespoons of coffee beans and brew a double shot of espresso.
  3. Add a cup of milk to a blender, with 1 teaspoon of almond butter, 1/4-1/2 teaspoon organic pumpkin pie spice, the two soaked dates, 2-4 tablespoons of organic pumpkin pure, 1 banana, a double shot of espresso, 1 scoop of plain or vanilla protein powder and a handful of ice.
  4. Blend the ingredients together until smooth.
  5. Pour the smoothie into a large glass, garnish with homemade whip cream, sprinkling of pumpkin pie spice and pumpkin seeds.
  6. Enjoy!

Ingredients

Topping (Optional)

  • Homemade Whipping Cream recipe in notes
  • Additional sprinkling of pumpkin pie spice optional
  • Organic Pumpkin Seeds

Instructions

  • Start by placing two Medjool dates, pitted in a small bowl of boiling water. Let them soak for 10 minutes.
  • Next grind 2 tablespoons of organic coffee beans and brew a double shot of espresso according to your espresso maker.
  • To a blender add the milk, nut butter, pumpkin pure, pumpkin pie spice, banana, protein powder, double shot of espresso, two soaked dates and a handful of ice.
  • Pour the Pumpkin Latte Protein Smoothie into a large glass and top with homemade whip cream, more pumpkin pie spice and pumpkin seeds.
  • Sip and enjoy!
