Begin by preheating the oven to 350 degrees F
Then line two baking trays (13x18) with unbleached parchment paper and set aside.
Now in a medium sized mixing bowl combine flour, baking soda, baking powder, salt and 1 cup of chocolate chips.
In a large mixing bowl, with a hand mixer, cream the softened butter for one minute until creamy.
Mix in the brown sugar and cane sugar into the butter until light and fluffy. About 1-2 minutes.
Pour in the egg, egg yolk and vanilla extract and combine until smooth.
Grab the dry ingredients and pour it into the butter and sugar mixture.
Ditch the hand mixer and fold the flour into the wet ingredients with a rubber spatula until the last bit of flour disappears.
Optional step: Cover the dough with plastic wrap and stick the dough into the fridge to chill for 20 minutes.
With a 2.5 oz or 4 tablespoon cookie scoop, scoop the dough and place 6 cookie dough balls onto a baking pan, lined with parchment paper.
Top each dough ball with a few extra chocolate chips.
Bake the cookies at 350 F for 12 minutes or until the edges are golden brown and middles are slightly under baked.
Remove the cookies from the oven and shape the warm cookies with a circular cookie cutter or cup that is slightly bigger than the cookie.
Continue to bake the cookies until all the dough has been cooked.
Cool the cookies completely before melting the leftover chocolate chips in a microwave save bowl, in 30 second increments until velvety smooth.
Add the melted chocolate to a piping bag, barley snip the bottom with scissors and pipe spooky spider legs onto the tops of the cooled cookies chocolate chips.
Serve at a halloween party, for a spooky movie night or other festivity and enjoy!
