High Protein Dirt Cups

These high protein dirt cups are easy to make, require no cooking or baking and are healthy for you too. Made with real ingredients and zero refined sugar this nostalgic childhood dessert is tasty without sacrificing any flavor. It is great for breakfast, for kids lunchboxes or as an after dinner snack.

Ingredients
  

Protein Chocolate Mousse
  • 2 cup plain greek yogurt or yogurt of choice
  • 2 scoops Just Ingredients Chocolate Protein Powder or protein powder of choice
  • 2 tablespoon natural cocoa powder
  • 2 tablespoon milk of choice
  • 1-3 teaspoons pure maple syrup optional
  • 1 teaspoon vanilla extract optional
Cookie Crumble
  • 1-2 cup Simple Mills Brownie Thins or other chocolate cookie or cracker
Topping
  • 1 bag Smart Sweet Gummy Worms or other similar candy

Equipment

  • 1 Mixing bowl
  • 1 Whisk
  • 1 Mini Food Processor or blender
  • 4 6 oz plastic cups
  • 1 Cookie Scoop

Method
 

  1. Start by adding the yogurt, protein powder, cocoa powder and milk to a bowl and whisk together until combined.
  2. Taste the chocolate protein mouse and decide if you would like it to be sweeter. If you want it sweeter add 1-3 teaspoons of pure maple syrup and vanilla extract to taste. Then mix until smooth.
  3. In a blender or mini food processor add 1-2 cups of brownie thins and pulse until crumbly.
  4. Grab 4, 6 oz plastic cups and start layering the protein dessert.
  5. Sprinkle 1 tablespoon of cookie crumbs into the bottom of each cup.
  6. Then with a cookie scoop, scoop a dollop of chocolate protein mouse into each cup and smooth out with a spoon.
  7. Add another layer of cookie crumbs.
  8. Add another layer of chocolate protein mousse.
  9. Then add one more layer of cookie crumbs and top each cup with gummy worms.
  10. Serve and eat right away or use lids to store the parfaits in the fridge for up to a week.
