No Bake Chocolate Protein Cookies
These simple drop cookies give the oven a break and take little to no time to make. They are packed full of chocolate peanut butter protein powder, delicious gluten free oats and coconut. Making them the perfect breakfast cookie, afternoon snack or evening dessert.

- ½ cup grass fed butter or coconut oil
- ½ cup A2 Whole Milk or milk of choice
- 1 ½ cup organic coconut sugar or organic cane sugar
- 1 teaspoon pure vanilla extract
- ⅛ teaspoon sea salt or kosher salt
- 1 cup Just Ingredients Roasted Peanut Butter Chocolate Protein Powder or Chocolate Coconut Protein Powder, Chocolate Protein Powder
- 1 ¼ cup Organic Grain Free Rolled Oats I buy mine from a local health food store
- 1 ¼ cup Organic Grain Free Quick Oats can swap with rolled oats
- 1 cup Organic Unsweetened Shredded Coconut
Line a baking tray with parchment paper and set aside.
In a large mixing bowl add protein powder, oats and coconut flakes and whisk together with a fork to set aside for later.
In a medium saucepan over medium heat, add milk, butter and sugar
Whisk until combined.
Keep whisking until the butter melts and mixture comes to a boil.
Boil for 1 min and then remove from heat.
Now whisk in a pinch of salt and vanilla extract.
Add the protein powder, oats and coconut into the sugar mixture and mix in until incorporated.
Use a medium (2.5 oz) cookie scoop to scoop out 10 cookies onto the baking tray lined with parchment paper.
Then refrigerate the cookies until firm, about 10 minutes.
Enjoy immediately and store any leftovers in an airtight container in the refrigerator and enjoy up to a week.
