Croissant Breakfast Sandwiches
Plug in the waffle iron to preheat.
Then turn the cooking griddle to 350 F. Once the griddle is warm, grease it with avocado oil or butter.
Now cook the eggs and bacon on the griddle according to your liking.
Cut the croissants in half. Add a slice of bacon, an egg and slice of cheese to each bottom half. Then press the top part of the croissant on top to form a sandwich.
* Wrap each individually in parchment paper and aluminum foil and place in a large freezer friendly bag into the freezer if you want to freeze the sandwiches for later. If not move onto the next step.
Lift the waffle iron open and place a croissant sandwich in the center. Pull the lid down and cook about 3 minutes until the waffle iron light turns green. Remove the croissant sandwich and repeat with the rest.
Before eating add sliced tomato and avocado slices if you would like.
* If you chose to freeze the croissants. Remove one from the freezer to place in the refrigerator to thaw the night before you want to eat it. Heat in the waffle iron as usual after the sandwich thaws.
Enjoy!
